Sage Simple Syrup

This recipe will be used quite a few times over the fall and holiday season, so we should start with the basics. Herbal simple syrups are lovely, my favorite being rosemary and sage. They really resonate in infused recipes and have a very earthy quality that is hart to achieve without cooking them.

By making a sage simple syrup you have also preserved the taste of the season, so if you can find fresh sage before the frost sets in do so now! Same with rosemary replace every 5-8 leaves of sage with a 5 inch sprig of rosemary for this recipe. Sage is lovely in cocktails, and baking and the simple syrup creates an easy to use flavor for the winter months.
